As owner of Omaha-favorite Railcar Modern American Kitchen, Jared Clarke is proud to be opening a new neighborhood restaurant in Countryside Village. A native of Fairfield, Nebraska, Jared received his culinary training from Southeast Community College and the University of Nebraska where he received a degree in Culinology. After beginning his career in Lincoln, Jared moved to Chicago in 2005 to work for Lettuce Entertain You Restaurants and Cooper’s Hawk Winery and Restaurant where he honed his skills in American, French and Asian cooking techniques. During his time developing wine dinners and menu concepts as R&D chef at Cooper’s, Jared worked with the Celiac Foundation to help create more flavorful gluten-free offerings. Six years ago, Jared and his family moved back to Omaha where he was executive chef at Blue Sushi Sake Grill before developing and opening Railcar Modern American Kitchen in December, 2012. Railcar has developed a loyal following of diners who crave Jared’s modern comfort food made from scratch.
